Turkey Sausage Egg Bake

A Sausage Egg Bake is an easy and tasty addition to breakfast and is ready in about an hour.

  • Serves 9
  • Total Time: 1 hour and 10 minutes
  • Preparation Time: 15-20 minutes
  • Cook/Bake Time: 40-50 minutes


  • 8 eggs
  • 1 (16 ounce) package turkey breakfast sausage roll
  • 3 cups milk
  • 8 cups cubed French bread
  • 1 cup chopped red bell pepper
  • 1 ½ cups shredded low-fat Swiss cheese
  • ¼ cup chopped fresh parsley
  • Salt and pepper, if desired


  • Preheat oven to 350°F.
  • Grease 9x13-inch baking pan.


  • Cook the sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Crumble sausage into pieces.
  • In large bowl, whisk eggs, milk, and parsley. Add salt and pepper if desired.
  • Stir in sausage, bread cubes, red pepper, and 1 cup of cheese.
  • Pour mixture into baking dish and sprinkle with remaining cheese.
  • Bake 40-50 minutes or until a knife inserted into the center comes out clean.
  • Let sit 10 minutes before cutting or serving.
